When did you fi rst realize you wanted to become a chef?
I have been interested in being a chef since I was a kid, but never
Really pursued it until 2000, when I started at The Bertram Inn, in
Aurora. It was then that the real passion for this business grew.
Where and/or with whom did you learn to cook?
My biggest learning experience has come from The Bertram Inn
and the chef who I worked under at the time, Matt Mathlage. I also
read a lot and keep up on the latest trends and happenings in the
business.
What was your fi rst “job” in the business?
Breakfast cook at Denny’s. And then breakfast cook at the hotel.
What is your favorite dish to prepare at your restaurant and
why?
Scallops with corn and bacon ragout and candied hot peppers. It
is the dish that got me the job at North End, and to this day is one
of our most requested dishes. It is a fairly simple dish, with few
ingredients, but the combination is just delicious.
What is your favorite dish to eat at your restaurant and why?
I would have to go for the braised beef short rib with Brussels
sprouts and gnocchi. It’s braised beef, what else needs to be said?!?
But the deep, complex fl avors and the slow cooking just makes it
melt in your mouth.
What is the most unusual request you’ve ever gotten from a
customer?
The one that sticks out is a customer ordering a strip steak, and
they wanted half the steak medium well and half the steak medium
rare, but they didn’t want the steak to be cut in half.
The Hudson area has a diverse variety of great restaurants.
Why do you think that is?
I think the people of Hudson and their travels have basically “asked”
for the quality and diversity of restaurants. They have been places
around the country and the world and want to see that variety here
in town. And when you do open a restaurant, they will support it.
What is your favorite thing about the Taste of Hudson?
This will be my fi rst experience with the Taste of Hudson, but I’m
looking forward to meeting new people and sharing in the passion
they have for the community and their local restaurants.
